Dunlay’s on the Square is throwing a beer party for the ages on Friday, February 21st.  Beginning at 5:30 pm, beer-lovers are invited to an old school firkin beer tapping, where local brewery Two Brothers will break open an authentic firkin keg and pour uber fresh pints of a special Two Brothers French pressed coffee-infused Domaine DuPage – a Bière de Gardestylecountry ale.  To accompany the beer, 4-Star Restaurant Group corporate chef Kevin Ives has imagined an inspired short rib burger garnished with bacon, fennel, celery root coleslaw, and stone ground mustard.   Pints from the firkin alone will cost $7, short rib burgers $10, and a firkin pint and short rib burger combo for $15.

About Firkins:

A firkin is a unit of measure and also the size of a particular kind of keg used for cask conditioning; one quarter of a barrel, 72 pints, 9 imperial gallons. Firkins can be wooden or metal. The most curious thing about them is the manner in which they are tapped. In order to keep air out, the keg is laid on its side and the spout is driven in horizontally.

A breathing tube is inserted in the bung which is now on top to enhance the flow of beer using only gravity. CO2 is not used to carbonate or push the beer out.  Thus you get a naturally fermented and carbonated beer, or Real Ale, in a small batch. Many think beer tastes much better this way. In essence, firkin-contained Real Ale is comparable to the ale beers that were produced hundreds of years ago, before industrialization subjected them to processes that removed and/or killed the yeast, stripping the beer of many of its inherent vitamins (especially the B vitamins), minerals, and perhaps most importantly, taste.
